Healthy Taco Bake

I'm sure you've seen this in the store.

It has 200 calories. It also has 60 grams of fat per serving (two McDonald's Big Macs have 58g of fat). The sodium in this is a whopping 860 mg (also per serving). Most people eat 2+ servings of this.

Yes, I swore I'd never eat this again either. So here's a version you can enjoy. In fact, you can enjoy more than one serving. Each serving has 197.1 calories, 10.1 grams of fat, and 375.6 mg of sodium.

You'll Need:
  • 3 Tortillas, 8"
  • 1 Cup Shredded Mexican Cheese (Kraft Mexican Four Cheese Blend is what I use)
  • 1 Cup Shredded Queso Cheese
  • 1 small jalapeno (optional)
  • ½ green pepper
  • 2 mushrooms (optional)
  • 1 cup cooked frozen corn
  • 1 lb beef, ground (ground turkey works great and makes the nutrition even better)
  • To Taste: Paprika, Chili Powder, Garlic Powder, Salt, Pepper
*A springform pan works great for this, but a pie pan works wonderfully also.

PrePrep:
  • Preheat oven to 350°F
  • Dice veggies
Prepare:
  • Brown the meat
  • When meat is almost fully cooked- drain and return to pan
  • Add veggies
  • Mix well while meat finishes browning
  • Season to taste
  • Layer in this order (bottom to top): Tortilla, cheese, meat mixture, cheese, tortilla, meat mixture, cheese, tortilla, cheese.
  • Bake until golden, slice like pie and serve.

Manwich Bites

Want the printable? Click the title and scroll to the bottom.
Incredibly easy for those nights when you just don't feel like putting in a lot of effort (we've all been there).

It takes 3 main ingredients and some basic spices. Doesn't get any simplier than that.

You'll need:

  1. About 1 lb Ground Beef or Turkey
  2. 1 can of Manwich (we like Manwich Bold in particular)
  3. 1 can of flaky layered biscuits
  4. To taste: Paprika, Chili Powder, Garlic Powder
  • Rolling Pin & Baking Sheet
PrePrep:
  1.  Brown ground beef/turkey
Prepare:
  1. Mix half a can of Manwich with browned meat (I like to use the leftover sauce to dip these in!)
  2. Roll biscuits flat
  3. Using a spoon, place Manwich mix on each biscuit.
  4. Fold biscuit over and press down edges with finger.
  5. Sprinkle with spices and bake according to directions.
Before baking
Browned and ready to serve!
